Beef Bourguignon

Ingredients
  

Main Ingredients
  • 2 pounds beef chuck roast, cut into 2-inch cubes Look for a good cut of beef.
  • 4 slices thick-cut bacon, diced Adds a rich flavor.
  • 1 large onion, diced
  • 2 large carrots, cut into large chunks
  • 8 ounces mushrooms, sliced
  • 1 cup pearl onions
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups red wine (Burgundy, Pinot Noir, Merlot, or Chianti)
  • 2 cups beef broth
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 leaf bay leaf
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Method
 

Preparation
  1. Preheat your oven to 325°F (165°C).
  2. In a large Dutch oven over medium heat, add the diced bacon. Cook until crisp; remove with a slotted spoon, leaving the fat in the pot.
  3. Season the beef cubes with salt and pepper. Brown the beef in the bacon fat over medium-high heat until deep brown on the outside, about 5 minutes.
  4. Once browned, remove the beef and set aside. Add the onions and carrots to the pot and sauté until softened, about 5 minutes.
  5. Stir in the minced garlic and cook for another minute until fragrant. Add the tomato paste and flour, cooking for one minute.
Cooking
  1. Pour in the red wine and beef broth, scraping any browned bits off the bottom of the pot.
  2. Return the beef and bacon to the pot along with the pearl onions, thyme, and bay leaf. Bring everything to a simmer.
  3. Cover the Dutch oven and place it in the preheated oven. Bake for 2 to 2.5 hours, or until the beef is tender and the sauce has thickened.
  4. In a separate pan, melt the butter over medium heat. Add the mushrooms and sauté until browned. Incorporate them into the stew in the last 30 minutes of cooking.
Finishing Touches
  1. Remove the bay leaf, taste, and adjust seasoning. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. This dish can also be frozen for up to 3 months.
