Preparation
- Preheat your oven to 350°F (175°C).
- Season the beef cubes generously with salt and pepper.
- Heat olive oil in a large Dutch oven over medium-high heat and brown the beef on all sides.
- Remove the beef and set it aside.
- In the same pot, sauté onion and garlic until softened and fragrant, about 5 minutes.
- Stir in the flour and cook for an additional minute.
Cooking
- Return the beef to the pot with red wine, beef broth, sliced carrots, bay leaves, and thyme.
- Bring to a gentle simmer and cover the pot with a lid.
- Transfer to the preheated oven and cook for about 2.5 to 3 hours until the meat is fork-tender.
- Meanwhile, cook the bacon in a skillet until crisp, then add quartered mushrooms and sauté until golden.
- In the last 30 minutes, stir the bacon and mushroom mixture into the pot.
Finishing Touches
- Remove bay leaves and thyme before serving.
- Garnish with fresh parsley before serving.
Notes
Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat gently on the stove.
