  • 2 pounds beef chuck, cut into 2-inch cubes Use a high-quality cut for the best flavor.
  • 1 bottle red wine (preferably Burgundy) Choose a wine that you enjoy drinking.
  • 4 cups beef broth Can substitute with vegetable broth for a vegetarian version.
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots sliced
  • 1 pound mushrooms, quartered
  • 4 ounces bacon, diced
  • 2 tablespoons flour Can use gluten-free flour if needed.
  • 4 sprigs fresh thyme
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish Adds a lovely touch of color.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Season the beef cubes generously with salt and pepper.
  3. Heat olive oil in a large Dutch oven over medium-high heat and brown the beef on all sides.
  4. Remove the beef and set it aside.
  5. In the same pot, sauté onion and garlic until softened and fragrant, about 5 minutes.
  6. Stir in the flour and cook for an additional minute.
Cooking
  1. Return the beef to the pot with red wine, beef broth, sliced carrots, bay leaves, and thyme.
  2. Bring to a gentle simmer and cover the pot with a lid.
  3. Transfer to the preheated oven and cook for about 2.5 to 3 hours until the meat is fork-tender.
  4. Meanwhile, cook the bacon in a skillet until crisp, then add quartered mushrooms and sauté until golden.
  5. In the last 30 minutes, stir the bacon and mushroom mixture into the pot.
Finishing Touches
  1. Remove bay leaves and thyme before serving.
  2. Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container for up to 3 days, or freeze for up to 3 months. Reheat gently on the stove.
