- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef until fully cooked, being cautious not to overcook.
- Stir in the enchilada sauce and rinsed black beans, cooking for an additional 2-3 minutes until heated through.
- Spoon the beef mixture into each tortilla and roll them up tightly, placing them seam-side down in a greased baking dish.
- Pour any remaining enchilada sauce over the top and sprinkle with cheese.
- Bake for 20 minutes or until the cheese is bubbly and golden brown.
Notes
Serve with guacamole, salad, or a dollop of sour cream. Store leftovers in an airtight container in the fridge for up to three days, or freeze for two months. Reheat in a covered baking dish at 350°F (175°C).
