Preparation
- Preheat your oven to 350°F.
- Butter your baking dish generously and sprinkle a little sugar over the buttered dish if desired.
- Wash and pit your cherries, then pat them dry.
- Spread the cherries in an even layer in the dish.
Batter Preparation
- In a bowl, whisk together the eggs and sugar until the mixture is lighter and the sugar appears mostly dissolved.
- Whisk in the milk, vanilla, salt, and melted butter.
- Add the flour and whisk until smooth, leaving a few tiny lumps if necessary.
Baking
- Pour the batter over the cherries in the baking dish.
- Bake for about 35 to 45 minutes until puffed, golden, and set in the center. A knife should come out mostly clean.
- Cool for 10 to 15 minutes before serving. It will sink a bit, which is normal.
Notes
Clafoutis is best the day it is baked but can be stored in the fridge for 2 to 3 days. Reheat in a 300°F oven for better texture, or microwave for a quicker option. Avoid freezing if possible, as it may affect texture.
