Ingredients
  

Main Ingredients
  • 1 pound fresh cherries Sweet cherries are ideal.
  • 3 large eggs Use fresh eggs for better flavor.
  • 1/2 cup granulated sugar Plus a little extra for the pan if desired.
  • 1 cup milk Whole milk is recommended.
  • 1/2 cup all purpose flour Can substitute with gluten free flour blend.
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons melted butter Plus more to grease the dish.
  • 1 teaspoon optional: kirsch or rum For additional flavor.
  • 1 teaspoon optional: lemon zest To brighten the flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Butter your baking dish generously and sprinkle a little sugar over the buttered dish if desired.
  3. Wash and pit your cherries, then pat them dry.
  4. Spread the cherries in an even layer in the dish.
Batter Preparation
  1. In a bowl, whisk together the eggs and sugar until the mixture is lighter and the sugar appears mostly dissolved.
  2. Whisk in the milk, vanilla, salt, and melted butter.
  3. Add the flour and whisk until smooth, leaving a few tiny lumps if necessary.
Baking
  1. Pour the batter over the cherries in the baking dish.
  2. Bake for about 35 to 45 minutes until puffed, golden, and set in the center. A knife should come out mostly clean.
  3. Cool for 10 to 15 minutes before serving. It will sink a bit, which is normal.

Notes

Clafoutis is best the day it is baked but can be stored in the fridge for 2 to 3 days. Reheat in a 300°F oven for better texture, or microwave for a quicker option. Avoid freezing if possible, as it may affect texture.
