Classic French Roast Chicken

Ingredients
  

For the Chicken
  • 1 whole whole chicken (4½–5 pounds / 2–2.3 kg) Aim for a free-range or organic option for the best flavor.
  • 6 tablespoons unsalted butter, softened Feel free to substitute with olive oil for a lighter version.
  • 6 cloves garlic, finely minced
  • 8-10 sprigs fresh thyme
  • 2 sprigs fresh rosemary, finely chopped
  • ¼ cup fresh flat-leaf parsley, finely chopped
  • 1 whole lemon Squeeze and stuff halves into cavity.
  • 2 medium shallots, halved
  • 2 teaspoons fine sea salt
  • 1½ teaspoons freshly ground black pepper
  • 1 tablespoon olive oil
  • 1 cup chicken stock

Method
 

Preparation
  1. Remove the chicken from the refrigerator 45 to 60 minutes before roasting to reach room temperature.
  2. Preheat the oven to 425°F (220°C) and position the rack in the center.
Herb Butter Mixture
  1. In a bowl, blend the softened butter, minced garlic, chopped rosemary, chopped parsley, juice from half of the lemon, 1½ teaspoons of salt, and 1 teaspoon of black pepper until combined.
Chicken Preparation
  1. Gently loosen the skin over each breast without tearing it. Spread half of your herb butter directly underneath.
  2. Use the remaining herb butter to coat the chicken’s skin evenly.
  3. Stuff the cavity with squeezed lemon halves, thyme, and halved shallots.
  4. Tie the legs together with kitchen twine and tuck the wing tips under the body.
Roasting
  1. Pour chicken stock into the roasting pan and place the chicken breast-side up.
  2. Roast for 20 minutes at 425°F (220°C) then reduce the temperature to 375°F (190°C) for another 55 to 70 minutes.
  3. Baste with pan juices every 20 minutes until the thickest thigh reaches 165°F (74°C).
Resting and Serving
  1. Transfer the chicken to a platter and cover it loosely with foil, allowing it to rest for 15 to 20 minutes.

Notes

For added flavor, marinate the chicken with herb butter overnight. Store leftovers in an airtight container for up to three days; can be frozen for up to three months. Reheat at 350°F (175°C).
