  1. Pat the sole fillets dry with paper towels to ensure a crispy crust. Season both sides generously with salt and pepper.
  2. Spread flour on a plate and lightly coat each fillet, shaking off the excess.
Cooking
  1. In a large skillet over medium heat, melt the unsalted butter until the foam begins to subside and it turns a light brown color.
  2. Carefully add the fillets to the skillet and cook for about 3-4 minutes on each side, or until they turn golden brown and flake easily with a fork.
  3. Once cooked, transfer the sole to a plate and squeeze fresh lemon juice over the top.
  4. Spoon the brown butter sauce over the fish, sprinkle with chopped parsley, and serve immediately.
