- In a large pot, heat a few tablespoons of olive oil over medium heat until it shimmers.
- Add the beef, pork, and chicken, browning the meats on all sides.
- Stir in the chopped onion, bell pepper, and garlic. Cook until softened, about 3-5 minutes.
- Mix in the drained kidney beans, black beans, and diced tomatoes.
- Pour in the beef broth, followed by the paprika, chili powder, salt, and pepper. Bring to a boil.
Cooking
- Reduce the heat and let the stew simmer for about 30-40 minutes, stirring occasionally.
- Serve hot in bowls, garnished with fresh herbs if desired.
Notes
For a thicker stew, mash a cup of beans and stir them back in. Leftovers can be stored for up to 4 days or frozen for 3 months. Thaw overnight before reheating on the stovetop.
