Preparation
  1. Rub a fondue pot with the garlic clove to create a fragrant base.
  2. Heat the dry white wine in the pot over medium heat until just simmering.
Cooking
  1. Gradually add the grated cheeses—Comté, Emmental, and Gruyère—stirring continuously until melted and creamy.
  2. Mix the cornstarch with the kirsch (if using) until smooth, then stir into the cheese mixture.
  3. Season the fondue with freshly ground black pepper.
Serving
  1. Serve immediately alongside cubed crusty bread for dipping.
