  • 7 oz dark chocolate (60–70% cocoa) Choose quality dark chocolate for best flavor.
  • 3 large eggs, separated Use fresh eggs for better results.
  • 3 tbsp powdered or granulated sugar Divided: 1 tbsp for egg yolks, 2 tbsp for egg whites.
  • ½ cup heavy cream Can be substituted with coconut cream for a dairy-free option.
  • 1 pinch salt
  • ½ tsp vanilla extract Optional.

Preparation
  1. Begin by breaking the chocolate into small pieces and melting it over a double boiler or in a heatproof bowl above simmering water. Stir until smooth and let it cool slightly.
  2. In a separate bowl, whip the heavy cream until soft peaks form. Chill the whipped cream until needed.
  3. In another bowl, whisk together the egg yolks, 1 tablespoon of sugar, and a pinch of salt until pale and thick.
  4. In a clean bowl, beat the egg whites until foamy. Gradually add the remaining 2 tablespoons of sugar and continue to beat until stiff peaks form.
  5. Stir the yolk mixture into the melted chocolate until fully combined.
  6. Gently fold in the whipped cream until just combined, then fold in the beaten egg whites in two additions.
  7. Spoon the mousse into glasses or ramekins and refrigerate for at least 2 hours before serving.

Notes

Serve in elegant glasses garnished with shaved chocolate or a dollop of whipped cream. Pairs well with fresh berries. Store in the fridge for up to 3 days or freeze in individual containers for up to a month. Thaw in the fridge overnight.
