Preparation
- Crack 2 to 3 eggs into a bowl. Add a pinch of salt and beat with a fork until mixed smoothly.
- Heat a small nonstick pan over medium to medium-low heat. Add about 1 tablespoon of butter and let it melt without browning.
Cooking
- Pour in the eggs and stir gently with a spatula, making tiny soft curds.
- When the eggs are mostly set but still glossy, stop stirring.
- Tilt the pan slightly and fold one side of the omelette over, then roll it gently into shape.
- Slide onto a plate seam-side down and top with herbs and another knob of butter if desired.
Serving
- Serve immediately while hot and tender.
Notes
Use medium-low heat to avoid drying out the omelette. If the pan looks dry, add more butter. Avoid overloading with fillings for a smooth roll.
