  • 1 lb chicken breast, cubed Use skinless chicken for a lighter option.
Onions and Broth
  • 2 large onions, caramelized Caramelization adds depth and sweetness.
  • 2 cups chicken broth
Cream and Cheese
  • 1 cup heavy cream Can substitute with coconut milk for a lighter version.
  • 1 cup shredded cheese (e.g., Gruyère or Swiss) Feel free to mix cheeses for better melt.
Seasoning and Oil
  • 2 tablespoons olive oil
  • to taste Salt and pepper
  • Fresh thyme for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Once hot, add the cubed chicken and cook for about 5-7 minutes until browned.
  3. Stir in caramelized onions and cook for another 2 minutes.
  4. Meanwhile, cook the orzo pasta according to package instructions, then drain.
Combining Ingredients
  1. In the skillet, combine chicken, onions, cooked orzo, chicken broth, heavy cream, salt, and pepper. Mix well.
  2. Transfer the mixture to a baking dish and top with shredded cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes until bubbly and the cheese is melted and slightly golden.
Serving
  1. Garnish with fresh thyme before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat at 350°F (175°C).
