Preparation
- In a large pot, melt the butter with the olive oil over medium heat.
- Add the sliced onions, stirring frequently, and cook for about 40 minutes until deep golden brown and fragrant.
Cooking
- Pour in the white wine, scraping up any bits from the bottom of the pot.
- Allow the wine to simmer for a few minutes until mostly evaporated.
- Pour in the beef broth, add thyme and bay leaves, bring to a boil, then reduce heat and let simmer for 20 minutes.
Assembly
- Preheat the oven to 400°F (200°C). Arrange baguette slices on a baking sheet and toast for 5-7 minutes until golden brown.
- Remove thyme sprigs and bay leaves from the soup. Ladle the soup into oven-safe bowls, top with toasted baguette slices and cover with grated Gruyère cheese.
- Broil in the oven for 3-5 minutes until cheese is bubbly and golden.
Notes
For presentation, use rustic oven-safe bowls. Pairs well with a green salad or French crepes. Store leftovers in an airtight container for up to 3 days, or freeze without bread and cheese for up to 3 months.
