  • 1 teaspoon orange blossom water Essential for the unique flavor; do not skimp on this ingredient.
  • 1 pinch salt

Preparation
  1. In a saucepan, bring the milk and butter to a gentle boil while watching carefully for bubbling.
  2. Quickly stir in the flour once the milk and butter are boiling and continue to stir until a thick dough forms, about one minute.
  3. Remove the pan from heat and beat in the eggs one at a time, ensuring each egg incorporates well before adding the next.
  4. Stir in the sugar and orange blossom water, mixing until combined and aromatic.
  5. Spread the mixture into a buttered pan and bake in a preheated oven at 350°F (180°C) for 30-35 minutes, until golden brown.
Serving
  1. Serve the Galette Comtoise warm or at room temperature, dusted with powdered sugar.

Notes

Store leftovers in an airtight container in the fridge for up to three days. For freezing, wrap tightly and it will last a month. Reheat in a preheated oven for about 10 minutes. Make sure not to boil the milk and butter for too long to avoid texture changes.
