For the Cake
  • 7 oz dark chocolate (60–70% cocoa) Choose high-quality for better flavor.
  • ¾ cup unsalted butter Dairy-free butter can be used as an alternative.
  • ¾ cup granulated sugar
  • 4 large eggs Organic eggs recommended for freshness.
  • ¼ cup all-purpose flour Almond flour can be used for a gluten-free option.
  • Pinch salt
  • ½ tsp vanilla extract Optional but enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch (20cm) round cake pan with parchment paper.
  2. Melt the chocolate and butter in a heatproof bowl over a double boiler or in the microwave in 20-second intervals. Stir until smooth and let it cool slightly.
  3. Whisk together the sugar and eggs in a mixing bowl until the mixture is pale and slightly thickened.
  4. Slowly pour the melted mixture into the eggs while continuously stirring to avoid scrambling the eggs.
  5. Sift in the flour and gently fold until just combined.
Baking
  1. Transfer the batter into the prepared pan and smooth the top with a spatula.
  2. Bake for 22–25 minutes until the edges are set and the center is slightly soft.
  3. Cool the cake in the pan for 10 minutes before transferring it to a wire rack.

Notes

Serve warm or at room temperature, with whipped cream or vanilla ice cream. To store, keep in an airtight container in the fridge for up to four days or freeze for up to two months.
