Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a round cake pan with butter and dust with flour.
  2. In a large mixing bowl, whisk the egg yolks and sugar until pale and fluffy, about 5 minutes.
  3. Add the vanilla extract and lemon zest, mixing until well combined.
  4. In another bowl, whisk the egg whites and a pinch of salt until stiff peaks form.
  5. Gently fold the egg whites into the egg yolk mixture in three additions, being careful not to deflate.
  6. Sift the flour and baking powder over the mixture and carefully fold it in until no streaks remain.
  7. Pour the batter into the prepared cake pan and smooth the top with a spatula.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the top is golden and a toothpick inserted in the center comes out clean.

Notes

Store at room temperature for up to 3 days wrapped tightly in plastic wrap. Tastes best fresh or can be frozen for up to a month.
