Preparation
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a saucepan, add water, butter, and salt. Bring it to a simmer until the butter melts.
- Add the flour all at once and stir hard until it forms a thick dough, which may take about 1 to 2 minutes.
- Remove the saucepan from heat and let the dough cool for a couple of minutes.
- Add eggs one at a time, mixing well after each addition to achieve a smooth, thick but pipeable dough.
- Stir in the grated cheese and any optional spices if using.
Baking
- Scoop or pipe small mounds (about 1 tablespoon) onto the prepared baking sheet.
- Bake for 10 minutes at 425°F (220°C), then reduce heat to 375°F (190°C) and bake for an additional 10 to 15 minutes until deeply golden and puffed.
- Avoid opening the oven door too early to ensure the puffs rise properly.
Notes
Serve warm for the best flavor. These Gougères can be paired with mustard for dipping, or filled with ham or cream cheese for added flavor. Refresh leftovers in a 350°F (175°C) oven for 5 to 7 minutes.
