Ingredients
  

Dough Ingredients
  • 1 cup Water (or half water and half milk) For a slightly richer puff.
  • 1/2 cup Unsalted butter Adds richness.
  • 1 tsp Salt
  • 1 cup All purpose flour
  • 3 large Eggs (room temperature preferred)
  • 1 cup Grated cheese (e.g., Gruyere, Comte, or sharp cheddar) Freshly grated cheese is recommended.
Optional Seasonings
  • 1 pinch Black pepper Optional for flavor.
  • 1 tsp Mustard powder Optional for flavor.
  • 1 pinch Cayenne pepper Optional for added spice.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a saucepan, add water, butter, and salt. Bring it to a simmer until the butter melts.
  3. Add the flour all at once and stir hard until it forms a thick dough, which may take about 1 to 2 minutes.
  4. Remove the saucepan from heat and let the dough cool for a couple of minutes.
  5. Add eggs one at a time, mixing well after each addition to achieve a smooth, thick but pipeable dough.
  6. Stir in the grated cheese and any optional spices if using.
Baking
  1. Scoop or pipe small mounds (about 1 tablespoon) onto the prepared baking sheet.
  2. Bake for 10 minutes at 425°F (220°C), then reduce heat to 375°F (190°C) and bake for an additional 10 to 15 minutes until deeply golden and puffed.

Notes

Serve warm for the best flavor. These Gougères can be paired with mustard for dipping, or filled with ham or cream cheese for added flavor. Refresh leftovers in a 350°F (175°C) oven for 5 to 7 minutes.
