Preparation
- Begin by sifting the almond flour and confectioners’ sugar together at least twice to eliminate lumps.
- In a separate bowl, whip the aged egg whites until frothy, then gradually add the superfine sugar until you reach stiff peaks.
- If desired, add gel food coloring and mix evenly.
- Gently fold the dry ingredient mixture into the meringue until the batter flows like lava.
- Transfer the batter into a piping bag and pipe small circles onto a lined baking sheet.
- Allow the piped macarons to rest until they form a skin, about 30-60 minutes.
Cooking
- Preheat the oven to 300°F (150°C) and bake the macarons for 15-18 minutes.
- Once cooled, pipe or spread filling onto the flat side of one shell and sandwich with another shell.
Notes
Macarons can be stored in an airtight container in the fridge for up to five days or can be frozen for three months. For the best taste, bring them to room temperature before serving.
