Ingredients
  

Dough Ingredients
  • 4 cups all-purpose flour
  • 1 cup cold unsalted butter Ensure the butter is cold for flaky layers.
  • 1 cup whole milk, warm
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1/4 cup white granulated sugar (or honey)
  • 1 tsp salt
Filling
  • 12 bars dark chocolate
  • 1 egg beaten (for egg wash)

Method
 

Activate the Yeast
  1. In a small bowl, mix the warm milk, sugar, and yeast. Let it sit for about 5 minutes until it becomes foamy.
Make the Dough
  1. In a large mixing bowl, combine the flour and salt. Add the yeast mixture and stir until a dough forms.
  2. Knead the dough for approximately 5 minutes until it’s smooth.
Prepare the Butter
  1. Place the cold butter between two sheets of parchment paper and flatten it into a rectangle about 1/2 inch thick. Chill in the refrigerator until firm but pliable.
Laminate the Dough
  1. Roll out the dough into a rectangle larger than your butter block. Center the butter on the dough and fold the edges over, sealing it tightly.
  2. Roll this dough out into a larger rectangle and fold it into thirds like a letter. Chill for 30 minutes.
  3. Repeat this rolling and folding process two more times.
Shape the Pastries
  1. Roll out the laminated dough into a rectangle about 1/4 inch thick and cut it into smaller rectangles.
  2. Place a chocolate stick on one end of each rectangle and roll it up tightly.
  3. Lay them on a baking sheet lined with parchment paper.
Final Rise
  1. Cover the rolled pastries and let them rise in a warm environment for about 1-2 hours until they have doubled in size.
Baking Time
  1. Preheat your oven to 375°F (190°C). Brush the pastries with the beaten egg for a golden crust.
  2. Bake for 15-20 minutes until they are golden brown and flaky.
Serve
  1. Allow the pain au chocolat to cool slightly on a wire rack. They are best enjoyed warm or at room temperature.

Notes

Store leftover pain au chocolat in an airtight container in the fridge for up to 3 days. For longer storage, freeze them for up to a month.
