Ingredients
  

Pastry and Filling
  • 2 sheets puff pastry sheets Look for all-butter versions for best flavor.
  • 150 g almond cream Substitutions include dairy-free cream or almond flour for gluten-free version.
  • 1 yolk egg yolk For egg wash.
  • 1 tbsp milk For egg wash.
  • 1 fève fève (optional) A small charm or bean, optional for tradition.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Lay one puff pastry sheet on a baking tray lined with parchment paper. Spread the almond cream evenly across the pastry, leaving a 1-inch border.
  3. If using, place the fève in the almond cream now.
  4. Cover with the second pastry sheet and press the edges together firmly to seal.
  5. In a small bowl, mix the egg yolk and milk. Brush this mixture over the top of the pastry and score a decorative pattern if desired.
  6. Bake in the oven for 30-35 minutes until puffed and golden brown.

Notes

Pithiviers is best served warm or at room temperature. Dust with powdered sugar and serve with vanilla ice cream or whipped cream for extra delight. Store in an airtight container and consume within 3 days, or freeze for up to a month.
