Preparation
- Trim and clean the leeks. Slice them thin.
- Peel the potatoes (or do not, if you like it rustic). Dice them into small chunks.
Cooking
- In a pot, melt butter on medium low heat. Add leeks and a pinch of salt.
- Cook leeks for 8 to 10 minutes, stirring occasionally, until soft.
- Add garlic for the last 30 seconds of cooking (if using).
- Add potatoes and broth. Bring to a gentle simmer.
- Simmer for 15 to 20 minutes until potatoes are very tender.
- Blend until smooth, then stir in cream or milk if desired.
- Taste and adjust salt and pepper as necessary.
Notes
This soup reheats very well and often tastes better the next day. Add broth if it becomes thick after refrigerating. Pair with a simple salad and bread for a complete meal.
