Preparation
- Preheat your oven to 375°F.
- Fit the crust into a 9 inch pie dish. Prick the bottom with a fork a few times.
- Blind bake the crust for 10 minutes. Use pie weights or dry beans if available, then set aside.
- Cook the bacon in a skillet until crisp. Drain on paper towels.
- In a bowl, whisk eggs, cream, salt, pepper, and nutmeg just until combined.
- Sprinkle the cooked bacon over the crust. Add cheese if desired.
- Pour the egg mixture over the top.
Cooking
- Bake in preheated oven for 30 to 40 minutes, until the center is set and the top is lightly golden. Cover the edges with foil if they brown too quickly.
- Let it rest for 10 to 15 minutes before slicing.
Notes
Serve with a light salad, fresh tomatoes, or roasted vegetables for a complete meal. Quiche can be made ahead and reheated for convenience. Avoid adding watery fillings to prevent a soggy quiche.
