- In a bowl, whisk flour and salt together.
- Whisk in eggs until combined.
- Gradually add milk and water, whisking until smooth.
- Whisk in melted butter; if needed, strain the batter for lumps.
- Rest the batter for 10 to 30 minutes.
Cooking
- Heat a nonstick skillet or crepe pan over medium heat.
- Lightly grease the pan with a paper towel rubbed in butter.
- Pour about 1/4 cup batter into the center of the pan and swirl to spread into a thin circle.
- Cook until the edges look dry, about 45 to 60 seconds; then flip and cook for another 15 to 30 seconds.
- Stack finished crepes on a plate, covering loosely with foil or a towel.
