Crepe Batter
  • 1 cup all-purpose flour gives structure, but still stays tender
  • 2 large eggs help bind and make the crepes flexible
  • 1 cup milk whole or 2 percent both work fine
  • 1/2 cup water helps keep them thin and light
  • 2 tablespoons melted butter adds flavor and prevents papery texture
  • 1 pinch salt even for sweet crepes
  • 1 tablespoon sugar optional, add for sweeter crepes
  • 1 teaspoon vanilla extract optional, add for sweeter crepes

Method
 

Preparation
  1. In a bowl, whisk flour and salt together.
  2. Whisk in eggs until combined.
  3. Gradually add milk and water, whisking until smooth.
  4. Whisk in melted butter; if needed, strain the batter for lumps.
  5. Rest the batter for 10 to 30 minutes.
Cooking
  1. Heat a nonstick skillet or crepe pan over medium heat.
  2. Lightly grease the pan with a paper towel rubbed in butter.
  3. Pour about 1/4 cup batter into the center of the pan and swirl to spread into a thin circle.
  4. Cook until the edges look dry, about 45 to 60 seconds; then flip and cook for another 15 to 30 seconds.
  5. Stack finished crepes on a plate, covering loosely with foil or a towel.
