Ingredients
  

Salad Ingredients
  • 4 to 5 pieces endives about 6 cups sliced
  • 1 cup walnuts toasted if you have time
  • 1 small apple or pear thinly sliced, optional but recommended
  • 2 to 3 tablespoons crumbled blue cheese or goat cheese optional
Dressing Ingredients
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice or white wine vinegar
  • 1 teaspoon honey
  • to taste salt and black pepper

Method
 

Preparation
  1. Rinse the endive, pat dry, and slice off the very bottom end. Slice the leaves into bite-sized pieces.
  2. Toast the walnuts in a dry skillet for 5 minutes until warm and fragrant.
  3. Whisk together the dressing ingredients in a large bowl.
Assembly
  1. Add the sliced endive to the bowl with the dressing and toss to coat.
  2. Sprinkle the toasted walnuts on top, and gently fold in the apple slices and cheese, if using.

Notes

Dress the salad right before serving for the best crunch. Chill the sliced endive for 10 minutes before mixing for an extra refreshing touch.
