Ingredients
  

Main Ingredients
  • 4-5 endives About 6 cups sliced
  • 1 cup walnuts Toasted if you have time
  • 1 small apple or pear Thinly sliced (optional)
  • 2-3 tablespoons crumbled blue cheese or goat cheese Optional
Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice or white wine vinegar
  • 1 teaspoon honey
  • salt and black pepper To taste

Method
 

Preparation
  1. Rinse and pat dry the endives. Slice off the bottom end and cut into bite-sized pieces.
  2. If using, slice the apple or pear thinly.
  3. Toast the walnuts in a dry skillet for about 5 minutes, until fragrant.
Make the Dressing
  1. In a large bowl, whisk together olive oil, Dijon mustard, lemon juice or vinegar, honey, salt, and black pepper.
Combine and Serve
  1. Add the sliced endives to the bowl with the dressing and toss well.
  2. Gently fold in the walnuts and, if desired, the cheese and apple or pear.
  3. Serve immediately for the best texture.

Notes

For best flavor, dress the salad right before serving and chill the endive for a refreshing crunch. Adjust the bitterness by adding more apple or honey if necessary.
