Preparation
- Rinse and pat dry the endives. Slice off the bottom end and cut into bite-sized pieces.
- If using, slice the apple or pear thinly.
- Toast the walnuts in a dry skillet for about 5 minutes, until fragrant.
Make the Dressing
- In a large bowl, whisk together olive oil, Dijon mustard, lemon juice or vinegar, honey, salt, and black pepper.
Combine and Serve
- Add the sliced endives to the bowl with the dressing and toss well.
- Gently fold in the walnuts and, if desired, the cheese and apple or pear.
- Serve immediately for the best texture.
Notes
For best flavor, dress the salad right before serving and chill the endive for a refreshing crunch. Adjust the bitterness by adding more apple or honey if necessary.
