  1. Dice the eggplant, zucchini, bell pepper, and tomatoes into even pieces to ensure even cooking.
Cooking
  1. In a large pot, heat the olive oil over medium heat until shimmering.
  2. Add the diced eggplant and cook for about 5 minutes, stirring often.
  3. Incorporate zucchini and bell pepper, cooking for another 5-7 minutes until tender.
  4. Stir in the tomatoes, season with salt and pepper, and let the mixture simmer for 15-20 minutes until all vegetables are tender.
