  • 2 pieces sole fillets Ask at the fish counter to skin and fillet for you.
  • 2 tablespoons clarified butter or a mix of butter and oil Use clarified for higher heat tolerance.
  • 1 lemon juice from lemon Added at the end for liveliness.
  • 2 tablespoons chopped parsley Fresh parsley adds brightness.
  • 1/4 cup all-purpose flour Lightly dusted to avoid a thick crust.
  • to taste salt and pepper For seasoning the fish.

Method
 

Preparation
  1. Pat sole fillets dry. Season both sides with salt and pepper.
  2. Lightly dredge in flour and shake off the extra.
Cooking
  1. Heat a skillet over medium heat. Add clarified butter or a mix of butter and oil.
  2. Cook the fillets for 1 to 2 minutes per side, until lightly golden.
  3. Remove fish to a warm plate.
  4. Add a couple tablespoons of butter to the pan. Let it foam and turn lightly golden.
  5. Add lemon juice and chopped parsley, swirling the pan.
  6. Pour the sauce over the fish and serve immediately.

Notes

Keep sides light and fresh. Enjoy with mashed potatoes, rice, green vegetables, or crusty bread.
