Preparation
- Beat the eggs in a bowl, adding a pinch of salt and a dash of black pepper until the mixture is light and frothy.
Cooking
- In a nonstick skillet, melt the butter over medium heat until it starts to bubble slightly.
- Pour the beaten eggs into the skillet and let them cook undisturbed for about 2 minutes.
- As the edges start setting, gently slide a spatula underneath to lift the cooked egg, allowing uncooked portions to flow to the bottom.
- When the eggs are almost set but still slightly runny on top, sprinkle the grated Tomme des Pyrénées cheese over one half.
- Carefully fold the omelet over the cheese and let it cook for another minute.
- Garnish with freshly chopped parsley and serve immediately.
Notes
For a quicker prep, grate cheese and chop parsley in advance. For added flavor, consider adding sautéed garlic or vegetables.
