Method
 

Preparation
  1. Preheat the Oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the Puff Pastry: Roll out the puff pastry on a floured surface and sprinkle half of the sugar evenly over the top. Sprinkle a pinch of salt and vanilla extract if using.
  3. Fold the Pastry: Starting from one edge, roll the pastry towards the center, and do the same from the opposite edge, creating a log-like shape.
  4. Chill the Rolls: Wrap the pastry log in plastic wrap and refrigerate for about 15 minutes.
  5. Slice the Pastry: Remove from the refrigerator and slice the log into approximately 1/2-inch pieces. Lay each slice on the prepared baking sheet, cut side up.
  6. Add Sugar: Sprinkle the remaining sugar over the top of each palmier.
  7. Bake the Pastries: Place the baking sheet in the preheated oven and bake for 12-15 minutes, flipping them halfway through.
  8. Cool and Enjoy: Remove and let cool on a wire rack before serving.

Notes

For best results, keep the dough chilled and avoid overbaking. Try variations like chocolate, savory, or nutty palmiers.
