Prepare the crust

Blind bake the crust

- Roll out the chilled dough on a floured surface to fit a tart pan.
- Press it into the pan and prick the bottom with a fork.
- Place parchment paper over the dough, fill with baking weights, and bake for 20 minutes.
- Remove the weights and parchment, then bake for an additional 10 minutes until lightly golden.
Make the pastry cream
- While the crust cools, heat milk in a saucepan until just before boiling.
- In a separate bowl, whisk together the egg yolks, sugar, and cornstarch until smooth.
- Gradually whisk in the hot milk, then return the mixture to the saucepan.
- Cook on medium heat, stirring constantly, until thickened.
- Remove from heat, stir in vanilla, and let cool.
Assemble the tart
- Once the crust is cooled, pour the pastry cream into the shell, smoothing it evenly.
- Refrigerate for at least 1 hour to set.
Prepare the strawberries
- Wash, hull, and slice the strawberries.
- Arrange them on top of the cream in an artistic pattern.
Finish with a glaze
- Warm the apricot jam slightly and brush it over the strawberries to give a beautiful sheen.
Serve
- Slice and serve chilled, letting the flavors mingle on your palate.
