  • 2 lbs potatoes (Yukon Gold recommended) Yields a creamy texture; use waxy varieties for best results.
  • 200 g cheese (Cantal or Gruyère) Traditionally, Cantal cheese adds authentic flavor; Gruyère is a good substitute.
  • 100 g pancetta or bacon Provides savory depth; feel free to use a vegetarian alternative.
  • 2 cloves garlic Introduces aromatic flavor; adjust according to your preference.
  • Salt and pepper To taste
  • Fresh herbs (thyme or parsley) Optional, for garnish and added freshness.

Preparation
  1. Peel and slice the potatoes into thin rounds, about 1/8-inch thick. Dice the pancetta or bacon into small pieces. Grate the cheese of your choice and set aside.
Cooking
  1. In a large skillet over medium heat, add the pancetta or bacon. Cook until crispy and it has released its fat. Remove the pancetta and leave the rendered fat in the pan.
  2. Layer the potato slices in the same skillet in an even layer, seasoning each layer with salt and pepper. Cook, covered, for 20-25 minutes, stirring occasionally until the potatoes are tender.
  3. Once the potatoes are tender, stir in the minced garlic and reserved pancetta. Top the potato mixture with the grated cheese. Cover the skillet again and allow the cheese to melt for about 5 minutes.
  4. For a crispy top, place the skillet under a broiler for 2-3 minutes after the cheese has melted. Keep a close eye to prevent burning.
  5. Garnish with fresh herbs if desired, and serve hot with a side salad or crusty bread.
